We know you can get salmon just about any time now a days. In the Spring, there is a wave of fresh caught salmon, depending in where you live, that tastes amazing. We have tried baking, pan frying, deep frying, roasting and just about any option you can think of. What we present to you here is the best taste we have found so far. It is a mix of several treatments that we believe brings the best flavor to you and yours and still simple to make.

Ingredients:
2 6-ounce salmon fillets
Salt
Pepper
1 tablespoon olive oil
1 clove garlic, grated
2 tablespoons miso paste
½ teaspoon Dijon mustard
1 tablespoon honey
2 tablespoons fresh lemon juice
1/3 cup pistachios, chopped
Instructions:
Preheat oven to 375 degrees.
Pat the salmon steaks dry then salt and pepper each side and set aside. Line a baking sheet with parchment paper and place the fish on top.
In a bowl, whisk together the olive oil, garlic, miso, Dijon, honey and lemon juice. Brush ¾ of the mix over the top of the salmon then mix in the pistachios to the remaining sauce and brush that on top of the fish. Use a wooden spoon to press the last mixture into the fish making sure it sticks.
Bake for 15 minutes, until the fish is almost cooked through yet still pink inside. Let rest afterwards for 10 minutes. Serve over rice or herbed quinoa and enjoy the taste of Spring.
